3 1/3 cups all-purpose flour
2 cups mashed bananas
2/3 cup water
1 1/2 teaspoons salt
2/3 cup shortening

Instructions:
Preheat the oven to 325°F (165°C). Grease 8 pint-sized canning jars.
Cream shortening with sugar in a large bowl. Mix in eggs, mashed bananas, and water. Sift together flour, baking powder, baking soda, salt, cinnamon, and cloves. Combine with the banana mixture and stir in chopped pecans.
Fill jars halfway with batter, without lids. Clean any batter off jar rims.
Bake for 45 minutes. Sterilize lids and rings in boiling water during this time.
After baking, clean rims, seal each jar with a lid and ring, and listen for the “ping” as they seal.
Check for a sealed lid when cool.
Consume promptly or refrigerate sealed jars for up to a week.
